The Best Day Ever!

Sure you got your braces off, won a gold metal in the Olympics, proposed to the love of your life, birthed a child, were accepted to Dartmouth...but until you have my SWEET POTATOES, you can't officially say you have had the BEST DAY EVER! To help you along on the path to enlightenment, I am finally revealing the secret recipe....

1 pound can of Trappey's yams (in heavy syrup)
1 stick butter
2 eggs
1-1/2 cups sugar
3 tbsp flour
1 small can of evaporated milk
1 tsp lemon extract
1 tsp vanilla extract

Cover & simmer yams in syrup for 1 hour, drain. Whip with butter until fluffy, add remaining ingredients (again whip till fluffy). Put in greased 1 quart casserole dish & bake at 375 degrees for 1 hour . Add brown sugar & 1/2 cup pecans to top in the last few minutes of baking

My head is spinning with confusion. Your "Best Day Ever" recipe for sweet potatoes uses Trappeys Yams...yams are orangier and biologically different from sweet potatoes. However, the mix-up is shared with the U.S. Department of Agriculture which offically requires sweet potatoes labeled as "yams" to be labeled as "sweet potatoes"..huh?? (Furthermore, is it potaetoes or potatoes?). The demure garden flower known as Morning Glory is a close relative and has surely brightened a few best day evers.
